How to replace an egg in plant-based baking and cooking

Eggs are one of the easiest animal products to swap out. Use these egg replacements and enjoy more plant-based meals and desserts into your diet.
For baking:
1 egg = ½ avocado
1 egg = ½ ripe banana
1 egg = 3 tablespoons aquafaba (the water that chickpeas is cooked in, or what you drain out of a can of chickpeas)
1 egg = 3 tablespoons peanut butter
1 egg = 1 teaspoon baking powder + 1 tablespoon vinegar
1 egg = ¼ cup apple puree
1 egg = 1 tablespoon ground linseed + 3 tablespoons water
Cooking swaps:
- Make a breakfast scramble with crumbled tofu or tempeh.
- Swap hard-boiled eggs with white beans in salads.
- Make an omelette with chickpea flour and a pinch of turmeric for colour.
