Avocados cut in half

How to replace an egg in plant-based baking and cooking

News

Eggs are one of the easiest animal products to swap out. Use these egg replacements and enjoy more plant-based meals and desserts into your diet.

For baking:

1 egg = ½ avocado

1 egg = ½ ripe banana

1 egg = 3 tablespoons aquafaba (the water that chickpeas is cooked in, or what you drain out of a can of chickpeas)

1 egg = 3 tablespoons peanut butter

1 egg = 1 teaspoon baking powder + 1 tablespoon vinegar

1 egg = ¼ cup apple puree

1 egg = 1 tablespoon ground linseed + 3 tablespoons water

Cooking swaps:

  • Make a breakfast scramble with crumbled tofu or tempeh.
  • Swap hard-boiled eggs with white beans in salads.
  • Make an omelette with chickpea flour and a pinch of turmeric for colour.

Making small changes to what you eat will have a huge positive impact on your health, the planet and for animals.
