Breakfast taco recipe


Breakfast tacos are a delicious way to switch up your morning routine.

Our black bean and corn recipe is packed with flavour and protein. 

  • Yield: 2 servings

  • Cook Time: 5 minutes 


  • 1 can black beans, drained and rinsed
  • 1 can corn, drained and rinsed
  • 1 red capsicum, diced
  • 1 lime
  • 2 teaspoons taco seasoning 
  • 6 corn tortillas 
  • 1/4 cup coriander, chopped
  • 1 avocado, thinly sliced 
  • Salt and pepper, to taste
  • Hot sauce, salsa, red onion, crumbled plant-based feta or plant-based sour cream optional 


  • In a small bowl, combine the black beans, red capsicum, lime juice, taco seasoning and coriander. 
  • Heat a large frying pan on medium and crisp the corn tortillas for 30 seconds to warm.
  • Fill the warm torillas with the black bean mix and top with avocado and any other options you prefer.
